Ooooh Cous Cous

Whipped up a new meal two nights ago... well, not exactly a new one but combined a couple to make a new one.

First, preheated oven to 450 for the salmon fillet
Melted 2 tablespoons of butter, to that I added one tablespoon of lemon pepper and one of garlic salt. Mix well. Spoon over salmon, it's melted butter so it doesn't exactly stick. Find ways to really coat the salmon in it. Sprinkle paprika over the top, not too much, just enough for a dusting.
Slip salmon in the over (in a baking dish, if you aren't already using a baking dish, put it in one... you can't bake salmon on a counter :)), it will need to cook for approximately 25 minutes, maybe more depending on how thick it is.

Cous Cous! Robert's favorite is the Far East brand with rosemary and garlic I believe. Any flavor will do, I don't advise doing the chicken one however when combining it with salmon. Follow the directions on the box. Cous cous cooks very quickly so you can start preparing this when there is only about 10 minutes left on the salmon.

Heat about 2 tablespoons of EVO in a pan on medium-high heat. Once hot, add sliced onions (Iused half of a vidalia) and saute. Once they are starting to look like they are caramelizing, add in chopped yellow and orange peppers (I chopped 1 of each into bite sized pieces, and added 3/4 of it, you can save the rest for something else) and four good sized mushrooms sliced. Add salt and pepper. Mix around continually until you can really smell all of the fresh vegies flavors. Don't overcook because soggy vegetables are nearly inedible!

Mix the vegies and cous cous, serve with salmon, squeeze a little fresh lemon juice over the plate and taadaa! Easy, nutricious, and yummy dinner. It's very visually pleasing too with all the different colors.

We also added fresh stuffed baked scallops that we picked up at Publix on sale for $1.69 a piece. They cooked alongside the salmon, just went in 10 minutes earlier. That's personal preference but with us, it's load on as much seafood as possible!

Anyways, there's another recipe we enjoy. I just worked out so I need to head to the shower before the hubby gets home and wants a light dinner. Tonight.... chicken quesadilas with avocados?

Rain Rain Rain

Well the rain this week has been interesting. It's been nice going to sleep to the sound of rain and rolling thunder. Not so nice to wake up to half of your living room with soaking wet carpet. And no available maintenance men...
Yesterday, enjoying our day off and the lack of people out on the roads, Robert and I decided to head over to Mall of GA. I happened to use my reward zone coupons at Best Buy! YAYYY! I got the most badass coffe maker ever. You can have everything ready and have it preset to brew at whatever time you choose. Makes my morning so much easier!!! And it's beautiful and black with a stainless front. And this is it...

Dinner tonight... fabulous...

1 1/2 cups white rice
1 bag of soybeans/edamame
1 Jimmy Dean Hot flavored pork sausage
2 mushrooms, sliced and halfed
1 red peppers, chopped into bite sized pieces, not too small where they will cook too quickly
soy sauce and 1 table spoon butter
tablespoon of sea salt

Cook white rice
Boil soybeans with seal salt then remove from shells and combine with rice, add butter and stir soybeans throughout rice
begin to fry pork sausage, chopping up with spatula so it is divided and not one big sausage!!! needs to look almost like ground beef
when pork is about 3/4 of the way cooked, add pepper and mushrooms and sprinkle soy sauce and salt and pepper on top
continue to mix, almost in a stir fry manner until pork is no longer pink at all
add to rice and soy bean mixture!!
it looks pretty, tastes delicious, and is better for you than friend chicken, pizza, or frozen dinners!!

Hope you like it, it's inexpensive and quick (like 15 minutes tops) and it's a lot of food! Robert requests it a lot! haha!

Ladies Ladies Ladies

Mom sent me this in an email today. I thuroughly enjoyed it and just attempted to read it to R before he tuned it. But it's entertaining! And it is very very good to be a woman...

It is good to be a woman:
1. We got off the Titanic first.
2. We can scare male bosses with the mysterious gynecological disorder excuses.
3. Taxis stop for us.
4. We don't look like a frog in a blender when dancing.
5. No fashion faux pas we make, could ever rival the Speedo.
6. We don't have to pass gas to amuse ourselves.
7.. If we forget to shave, no one has to know.
8. We can congratulate our teammate without ever touching her rear end.
9. We never have to reach down every so often to make sure our privates are still there.
10. We have the ability to dress ourselves.
11. We can talk to the opposite sex without having to picture them naked.
12. If we marry someone 20 years younger, we are aware that we will look like an idiot.
13. We will never regret piercing our ears.
14. There are times when chocolate really can solve all your problems.
15. We can make comments about how silly men are in their presence because they aren't listening anyway.


On another note, I had my first Hearts On Fire sale today. An absolutely beautiful mount already set with a beautiful Hearts On Fire diamond! She will be a very lucky lady to be wearing this.

Oh the Meow Meow's

So Robert locked the cats out of the bedroom last night. When he got up to get ready for work this morning, I opened the door so they could come in. Immediately, Nismo jumped on the bed, wrapped his little paws around my arm, and nuzzled my face. He missed me so much!!!
Stupid little things like that, a cat who is super excited to be able to climb into bed with his person and snuggle, really make my days. I know, I sound ridiculous. Or like the old cat lady. But it really made me happy that he was so happy to see me.
I feel that pets are really important. All they want is to be fed and have some love. They give love to us so readily and can really cheer you up. I'm glad we have our shelter kitties. They have been inexpensive and very rewarding. Love the meow meow's!!!


Also, here is an article I found on my yahoo page this morning. I found it really informative and helpful. I am in constant battle with Bank of America over some stupid fee they are charging one of us something of that nature. Read it....

Hmm.. recipe?

Well.....
First blog, not all that exciting. Not sure how to start but I know I want an outlet. So here we go?
Considering it's a Saturday night, at 8:57... and I'm at home, cooking dinner, listening to Sublime (surprise!), and drinking a nice glass of chilled Pinot Grigio I guess I could start with a recipe I like.
Lame? Yes.
However, it works for me. R likes it. Correction, R LOVES it. Would eat it every day, except I suspect he would actually become the jolly green giant if he ate enough avocados. YIKES!
So, my incredibly amazing better than Frontera's home made GUAC!

3 Beautifull Ripe Avocados
1/3 red onion, chopped thuroughly (with my wonderful Pampered Chef chopper!)
3 Serranto Chiles, stems removed and chopped
2 tablespoons of chopped cilantro leaves
Lemon-as much or as little as you like. I love!
Salt & Pepper to your liking
1/2 big ripe home grown tomato, insides GONE, chopped

Scoop the insides out of the avocado, the meat if you will. Put into a nice big bowl.
Mash avocado with a fork then add onion, cilantro, salt & pepper, chili peppers and lemon. Be careful, the chili's are hot! Really! Only add as many you can handle, we like it hot :)
Add the chopped tomato to the guac when you're ready to serve.
Eat with big crunchy chips and margaritas!

Easy, affordable, healthy, DELICIOUS!

Anyways, that's it for my first blog, boring and domestic. It will get better... I hope!
